One of my most favorite things to do with Maxwell is bake. He is so enthusiastic about baking, and he loves cleaning up the dishes afterward :) We rotate between three recipes when we bake, one being this chocolate chip cookie recipe. This cookie recipe is “the best” because the edges are crispy & buttery and the inside stays soft. Plus, you only need one bowl for mixing the dough. Hooray!
A note from the baker: we use mini chocolate chips and have found the recipe tastes best when you sneak in a few scoops of chips before adding them to the bowl.
“THE BEST” CHOCOLATE CHIP COOKIES
INGREDIENTS:
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped walnuts (optional)
DIRECTIONS:
1. Preheat oven to 350 degrees F.
2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.
4. Serve warm with a glass of cold milk ;)

Maggie I have been a reader of your blog for quite a while and I really appreciate your honesty and sincerity. I wanted you to know your posts on your running have inspired me to get back to my workouts that had been slacking the last month or so. I feel so much better when I am working out. Thank you for sharing your heart for Jesus and your family and the sweet words of encouragement for mommies. I have three girls, ages 8, 10 and 12 and we farm, homeschool and have a music ministry. I love when you shared, it’s “easy to get worn on and lose focus on what is important” — I totally agree and can’t even begin to list all the benefits running has blessed me with. The ages of my children make me feel so tired by end of day, but since working out again (2 months ago now!) I am so much more motivated to play with them and continue refining our home, it’s amazing. ♥
